Been reading through the comments, and noticed a few times that there seems to a problem with "Invincibility" not working.
Hoping I can add some insight to this providing the circumstances it occurred in -
I have the steam version of GTA V and it is up to date, as well as the latest version of ENT and Scripthook. I do not use any other mods.
I enabled Invincibility as Trevor, and started the Ballas Rampage. I had full body armor but not full health. I noticed that the Invincibility option didn't work. I died, disabled the feature, and re-enabled it with full health. This fixed it, and it was functioning normally afterwards (switching on/off).
I haven't had time to try and replicate the above.
